I know you shouldn't have to, but in this case it might be best to put a one-touch switch through as late as you can and then set the transfer date as late in the day as you can.
You will possibly have a small ETC to pay, but if you don't want to move to EE for a few weeks, that might be the least worst option.

Also worth noting that some providers may offer to reimburse your early termination fees, e.g. Vodafone where you can apply for a credit on your account equivalent to what you have been charged up to £200 if you take out a 24 contract with them.

I've just got through to PN cancellation and terminated my contract with effect from today and it only cost me £23. They should hand the line back to OpenReach.
Fingers crossed.

I've installed a TP-Link Archer NX200 router which works with both FTTP and 5G cellular. At present I'm just on 5G as FTTP is not yet available. The highest download I've seen so far is 395 Mbps and it seems to me that the speed increases according to demand. I don't know how 5G works in detail, so it's just from observation. I've upgraded the SIM to unlimited data and the cost is about the same as what my FTTC was costing. No problems so far (tempting fate) and just waiting patiently for FTTP to be available.
