Should I have heard from Plusnet that they won't be offering landline service from January 26?

From memory the Hub2 only has 3 ethernet ports with Full Fibre.
Other than buying an ATA and a ethernet switch you could consider getting a new router like the FritzBox 7530 (the AX version has better WiFi). There are others you could consider.
While the 7530 only has 3 ethernet ports available it has a built in ATA and a DECT Base Station.

When looking at using a separate ATA and Ethernet switch, don't lose sight of your other need, that is to keep a phone working during a power cut. A combined router with bulit in ATA plus the ONT minimises the load during these periods. I use a Fritz!box 7530AX, which under normal conditions uses less power than a Plusnet hub.
I have one of these: https://www.amazon.co.uk/SKE-20000mAh-Uninterruptible-Supply-Battery/dp/B0CQR5GMN4/ref=sr_1_4?crid=2... that keeps my system running for many hours.
You will need an adapter such as one of these if you are using a Plusnet hub as the BT/EE/Plusnet use an input socket with a non standard central pin: https://toothbrushbattery.com/buy/bt-smart-hub-home-hub-dc-power-plug-adaptor/.
I have a cordless phone, so my built in ATA is fitted with a double output adapter, the ATA feeds both the cordlesss base unit and a cheap wired phone. This is kept with the ringer switched off so that it is not a nuisance under normal circumstances. During a power cut it is simply a matter of switching the ringer on.

Thanks - my postcode is HR20AR, no prospect of fibre of any kind any time soon. Just had a helpful conversation with PN & it looks like transferring phone & broadband to EE is the best bet & I can leave the email with PN as you say.
Unfortunately it appears you are in an area which (like mine) only has SoADSL available which neither Plusnet nor EE offer. When PSTN is switch off you won't have many options - BT and AAISP do offer SoADSL but it is quite expensive, but there are very few other ISPs that offer it.

I had not noticed this. I have not checked, but a Starlink 100Mbps satellite set up at £35 per month might not be that much more expensive than BT SoADSL and getting on for 100 times faster.

Thanks for the UPS link. Just to clarify when it says its good for 7 hours does that mean 7 hours from power cut with full use, or does that mean full function for 7 hours, ie if used it sparingly would it last longer? I suppose you would have needed a longer power cut to find out?
Its in an affordable price range.

There’s very little difference in a router power consumption between when it’s transmitting data and simply ticking over in keep alive mode.

Both the Plusnet Hub 2 and my Adtran ONT work from a 12 VDC supply so, in principle, with a suitable setup, that could simplify battery backup - i.e. no need for mains inverters etc. Even an old car battery? 😊
That is a lot of fiddling about. If mains is that bad some might be better off thinking about a house-level battery backup to keep everything running from lights to the freezer.
Far from cheap but I found it more economic and beneficial than solar, and I can now run on cheap rate (9p) electricity all day.
Size (and therefore cost) would depend on whether it is needed for heat / cooking.
