My activation date was supposed to be today but had an email form plusnet stating that my new activation date is now the 2nd January. Why would this be as I already have full fibre at the house, and I'm taking over as a new customer. So I'm going from Plusnet to Plusnet but faster broadband. Can anyway clarify? Thanks

Well, today is a public holiday with even our shops are closed ... still, you should not have been booked for a New Year's Eve call when OR will be trying to fix emergency faults. Will 48 hours make that much difference?
Happy New Year to everyone!

was yesterday a 'confirmed' date or was it 'we expect to install...' ?

Well it said expected activation 31st December, don't understand what you mean? The date you're given is surely the date it should be.
Ah! well no, this is Openreach/BTwholesale we're talking about !!
When you place an order with an ISP, the system gives the earliest possible 'estimated' date. Once Openreach/BTw have accepted the order they provide a 'confirmed' date which may/or not be later than the initial estimate.
Sound like in your case, the initial estimated date was yesterday, and once accepted , Openreach confirmed the actual date as tomorrow and Plusnet relayed that confirmation to you.
Since its a Full fibre install and you say the property already has it, it SHOULD just be a remote activation. Make sure the ONT is left powered as Openreach will try and test the connection as part of the ordering process. If it fails, then the order will revert to an engineer install which will delay it for some days.
Do you already have the Plusnet router ?

The Router is irrelevant at this juncture. If the ONT was powered off at the time that Openreach tested the connection then remote activation is unlikely to be attempted.

Welcome to the community.
I appreciate this has been confusing due to the expected activation date.
With today being your activation date, let me know if you experience any issues after today.
Thanks
