Has anyone a foolproof method of getting video files onto an iPhone such as WMV or AVI.
When I had a proper phone I could just drag and drop but this thing is a bastard

Probably the most foolproof method of getting it to work is by getting yourself a copy of QuickTime Pro plus whichever codecs you need (the latter are often free). That'll allow you to just open up a movie file, hit the Export option, find a suitable preset and away you go.
I feel compelled to point out by the way that whilst, yes, the iPhone's codec support is a bit limited, the codecs it does support are good, and are much easier to work with than the codecs from which you'll be converting. (AVI, for example, is an utter nightmare as it's just a container that can contain one of a wide range of different actual video formats.) WMV, whilst simpler, also isn't exactly renowned for its amazing quality either. So getting everything converted in to something more usable isn't such a bad idea.

I use an awesome program called Handbrake http://handbrake.fr/ for... well, just about everything!
It can easily convert anything into iPhone format (even has a preset), including DVDs. I manged to get WALL-E from DVD to iPhone in just a few steps. There's even a nice guide here: http://www.online-tech-tips.com/computer-tips/handbrake-convert-videos-into-iphone-format/
Good thing about Handbrake is it's open source so it's widely used and well supported.
Gets my two thumbs up.

Handbrake seconded here. It can look intimidating at first but there's a lot of good guides online - afterdawn.com for example (that's how I learned to use handbrake). Having said that, there's a guide posted above too
