A most annoying problem so searched to find a solution and this actually worked so I thought it might be of use to some posters http://forums.logitech.com/t5/Mice-and-Pointing-Devices/Mouse-Double-Clicks-when-I-only-Single-Click...

‎This problem is due a build up of Electro Static Field (ESF) on the plastic. ESF is most troublesome in very low humidity environments.  The internal circuitry design must not be robust enough to handle the gradual build-up of ESF that can occur through use.  Can't comment any more on the specifics since I'm a Mechanical Engineer and not an Electrical Engineer.
Blowing air (from your mouth, not a can of air) into the crack under the left mouse button fixes this issue because human breath is very moist. You can also recreate the problem by rubbing a piece of cloth over the left mouse button repeatedly to generate ESF.

You could try spraying with with wd40 or similar. Works well with electrical problems.

oil2x (contact oil) is a better option than wd40 for electrical components because its a persistent fluid in cool environments and will provide longer lasting protection, but I wouldn't use it on something that gets hot as it evaporates at about 50 degrees c and leaves a nasty residue behind

You could always buy a humidifier to reduce static build-up in general...
... or change any nylon carpets to wool/wool-mix...
