How can JPEG text images be turned into ODT text files so i can edit them

I have copied some pages of a book (the copy right of which is mine) on to my mac using an Epson 100 multi purpose printer.  Unfortunately they are jpeg images of the text is there any way i can turn these into odt text files so i can edit them.  Or have i copied them wrongly and should have done it another way on the Epson printer.  I am using open office org program as my word processor. Any advice help would be appreciated as it could save me a lot of retyping!

You need to use OCR (Optical Character Recognition) to scan the image and convert to text, either by scanning the pages using OCR or possibly converting the jpeg with some OCR software.
I'd start by googling 'ocr jpeg'...

did you have a CD with the printer? normally they give one away with that, dont think they scan jpeg script, it is normally that you tell the scanner its script

A way which works but is a bit roundabout
Print the jpeg using CutePDF or similar to produce a pdf file
Open the file with the latest version of PDF-Xchange Viewer free and use the OCR software included

Many thanks to everyone for pointing me in the right direction  I have managed to get a 15 days free trial of ABBYY FineReader Express which appears to be doing the job quite well
