I'm about to refer a friend to Plusnet.
They only really need Essentials broadband but, with the current offer on Unlimited, it would seem to be a bit silly not to go with it.
The only problem is that the current offer expires in a week whereas their contract with their current ISP (BT) doesn't expire until 4th December.
Is there any way I can get them signed up but delay the go live date until after their current contract has expired?

I can't see this being a problem. Instead of signing up over our website, I'd give our Sales Team a call to get this arranged for you. If you were to do this over the website, it's likely that our automated systems would place the orders straight away for the next available date for you.
