If you move from FTTC to FTTP, you lose the phone service, but you have 30 days from the start of the Full Fibre service in which to transfer the number to a VoIP provider.

Thanks, do Plusnet have any recommended residential providers who off basic VOIP?

No. They are purely now the 'cheap internet only' arm of BT.

You could create a second account and have a completely new connection done while maintaining your old one. However, you'd end up paying for two accounts. You lose the phone service at the end of 2025 (unless PN pull the plug earlier).
You can't "port" your phone number until your PN FTTP connection is up and running. Any earlier risks the closure or your account (it's currently controlled by the phone number).
As regards VOIP there ar many VOIP providers out there - you just need to find one that suits your needs. One thing to watch is that some providers cannot (or have been unable to in the past) handle the port of a ceased line.
If you have a good mobile signal and can make outgoing calls via mobile then A&A are worth a look. They can handle ceased lines.

That will all depend on your contract(s) for phone and broadband; what they are for and and who they are with.
If your current contract is combined for phone and broadband and is with PlusNet then yes it will probably go as PlusNet does not (generally) provide copper-only phone services.
If your situation is different please clarify....
