I'm looking at a SIM only plan with 1.5GB data, 2000 mins and 1000 text for £6/month.
I don't use mobiles much, so if I only use 0.5GB data, 500 mins and 100 text in one month, will the remaining 1GB data, 1500 mins and 900 texts carry over to the next month? Or do I lose them?

You lose them.
Superusers are not staff, but they do have a direct line of communication into the business in order to raise issues, concerns and feedback from the community.
