In my experience the blackening of the skin is not a reliable guide to the state of the banana inside. Quite often a black skin reveals an unblemished banana and at other times the skin appears OK but the contents are mush.
I find it hard to believe that the procedure in the video affected anything but the skin.
I don't possess a hair dryer so I await your results with interest Doris.
Update: Belatedly looked at the YouTube comments which are of the opinion that it is a con. Suggestion is that the banana at the start was frozen hence the sound when placed on the worktop.
Failed attempt to reproduce the claimed effect.

For those that were listening you'll have heard the banana snap when it was opened, not even rice and a hair dryer can do that. But if you want to try it a home put it in the fridge you'll get the same blackening effect that can be 'removed' with the hair dryer and you too can impress those that don't know any better!
