Trying my hand at "left overs" soup today - wish me luck

I have some :-
steamed carrots (baby)/peas/sweetcorn mix (about 1/2 a container)
roast chicken bits (shredded before added)
some [Censored] (sp?) mushrooms (dried)
some dried noodles
All added to a pot of boiling water with some seasoning & a couple of veg stock cubes & a fresh onion chopped.
Looks quite good so far and tastes ok (just starting to meld the tastes)
I am thinking of simmering it for about 30 min then leaving till lunchtime.
What do you lot think? - I usually make a veg broth or potato (tattie) & leek but fancied something different today  Cheesy

Well very nice it was after all. I decided to add some chilli flakes & a bit of light soy sauce to it after having yesterdays, so today’s will have a bit more kick  Wink
Nice thing about home-made soup is that there is usually enough for 2 days and it always tastes better on the 2nd day anyway.
If I make it again (probably) I will use a bit less noodles they seem to have exploded in the pan  Grin And that was just 2 "cakes" of the egg noodles.
