Missing pound riddle

Three people enjoy a meal at a restaurant. The waiter brings the bill for £30 so each person pays £10.
Later the chef realises that the bill should have only been £25 so she sends the waiter back to the table with £5. The waiter was not very good at Maths and could not figure out how to divide the £5 so he gave each person a £1 and kept £2 for himself.
So....the three people have paid £9 each for the meal.
9x3=27
The waiter kept £2
27+2 = £29
What happened to the other pound?

There's a few variants on this including buying something or paying for a hotel room but the idea is just the same.

I suppose that the arithmetic should be
Meal cost £25
Customers paid 3 x £9 = £27
Waiter kept £2
So total cost would have been £27 - £2 = £25

Going with OldJim vaguely here but I have another way of looking at it..
3 x meals cost £25.
Waiter gives back £3 - £1 to each while keeping £2 himself.
With his £2 taken from the £30, there is a £28 difference.
The meals were actually 8.33 recurring.
There is however another way of looking at this:
He gave back £3 out of £30 taking it down to £27. He then keeps the £2 which drops it to £25.
When you say he gave back £3 taking it to 27, you're then adding the £2 back on instead of deducting it which will of course create a missing £1 which isn't actually missing at all.
I need a new signature... i'm bored of the old one!

Oldjim is right,  it's a misleading question that is asking for a solution to a problem that doesn't exist  (i.e. there is no missing pound).
3 * (£10-£1) = £27,  waiter keeps £2,  restraunt gets £25,  all money accounted for!
