Egg & Soldiers

4 Egg Cups.jpgI've just recently recently rediscovered the delights of Egg & Soldiers !

Though I couldn't find our Egg Cups.

A trip to the local £shop and I bought these beauties, 4 for £1 !!

However, I am less pleased with the eggs purchased so far.

 

They do seem to have very little yolks.

 

I welcome suggestions as to where to buy eggs with "massive" yolks to dunk my soldiers into...

 

Perhaps it needs a trip to a local farm ?

 

Soldiers, I use a Kitchen Cleaver to cut slices of toast into "soldiers", on a chopping board, does a really great job.

 

Eggs, 4 minutes on a low simmer is just right for my tastes. Runny yolks, firm whites.

 

And I dip the soldiers into a Salt & Pepper mix on the plate, preferred to pinch or shaking over eggs.

 

A lovely mid afternoon snack.

Its the only way to have Boiled eggs , with a few dippy soldiers Thumbs Up

I always by my Eggs at local morrisons.

I get eggs from a local farm (only 700 yards from home). Large eggs with a good colour in the yolks...and 50p per dozen cheaper than local shops medium eggs.  Cool

A float tip is pleasing in its appearance and even more pleasing in its disappearance.

I too recently rediscovered boiled eggs, after I found one these in pan timers - available in various places, and they allow you to work out how hard/soft to boil them. As for the eggs, alas I don't have a local farm available and have to rely on the supermarket, I find it worth paying a little more, and my favourites are Burford Browns, they have lovely deep yellow yolks.

Cook normally buys in the eggs, on holiday abroad at the moment with Gardener hubby before Halloween & Bonfire night festivities, so don't want to interrupt them.

 

I'll have a drive round tomorrow and investigate local farms, as you suggest.

 

Looks like an Egg Fest is on the way.... with lots of taste testing !

 

I'm sure she can do something with all the left over unused eggs.....

Or I could save them for the trick or treaters, either boiled, or fresh !!

Best eggs obviously are the "home grown" ones. It's been a few years now since I last had any chickens. They always seemed to thrive on leftovers cooked up and mixed with feed mash. The only "problem" was "too fresh" as if frying they end up as cone shaped pyramids rather than flat. Used to get a surprising number of double yolkers and a few triples.

When boiled they always tasted different/better than shop bought eggs.

Two words: duck eggs. A good treat on the soldiers front is to wrap them in strips of bacon and bake them in the oven. Delicious!

Now then everyone, how do you get into your soft boiled egg ?

 

Do you bash them into submission,  and peel away shell, or just chop their heads off ?

 

I find chopping heads off often leaves minute bits of shell in the egg.

 

I'm a peeler....

Basher here too - after ten seconds under the cold tap. Makes it easier to remove shell.

We have three Welsummer Hens who keep use well supplied in eggs of excellent quality. though it's cheaper to buy eggs in a supermarket. It is apparently illegal to feed them scraps from the kitchen (after some food scare). If one dies, you are not allowed to chuck in the rubbish bin; you either have to incinerate the body or engage someone licensed to dispose of animal carcasses.

I assume that only applies if you are selling some products.

Like my brother who keeps chickens and a few pigs has to buy "proper" feed and have to occasional vet check.
