Roundcube and non-spam email identified as spam

Have got an incoming email which has been flagged as spam and directed to my catchall spam mailbox.
When in Roundcube, I want to say that this is not spam and to redirect the email.
According to the user guide, when an email has been identified as spam, Roundcube will display a 'not spam' button to click.
This isn't happening, Roundcube is displaying a 'spam' button (to mark the email as spam).
Also, I can't find a way in Roundcube to have the message redirected so the mail arrives at the recipient as intended.

This is because you are using a spam mailbox instead of directing it to the spam folder within an existing mailbox (I'm set up the same as you).
What you need to do is to move the email to the spam folder. You'll then find you have a 'not spam' button. When you click it the email will be moved back to the main inbox folder.

I use default spam handling where messages are tagged and directed to the mailbox Spam folder. In webmail, selecting a message there shows the buttons illustrated in the attachment.
If I click the Not spam button the message is reported to Cloudmark then, as Jelv said, moved back to the Inbox folder for that mailbox. Since this is a simple 'move' operation the messages are not reprocessed by Exim which would be necessary for the tagging to be removed. If that concerned me I could, of course, have chosen not to have them tagged.
This spam/not spam handling functionality is provided through a plugin written by Plusnet, it is not part of basic Roundcube processing. As far as I'm aware Roundcube does not have any 'message-handing rule' capability built in. I'm not sure if anyone has written a plugin for this sort of thing which I think would be needed to achieve the sort of processing cjags described..

That isn't going to be an option.
I have a number of mailboxes and the spam for all of these ends up in the catchall mailbox.
It is easier for me to manage that way.
At least I now know how spam/not spam and roundcube functions.

I have all my mailboxes set up using IMAP in Thunderbird. After doing the not spam bit I can just drag and drop the email to the correct mailbox.
