I expect that the answer to my question is "no", but is it possible to change the structure of my mailbox?
The structure at the moment is:
INBOX
INBOX.Drafts
INBOX.Sent
INBOX.Spam
INBOX.Trash
Unfortunately, my Android phone doesn't cope with sub-folders, and expects:
Inbox
Trash
Sent
Drafts
Outbox
I therefore have 9 folders on my phone. This isn't a problem, but the phone puts sent e-mails into Sent instead of INBOX.Sent, so they don't appear in the sent items on my PlusNet account.
I do hope there's a way around this.

This is to do with the way the mail collection software we use handles the namespace of IMAP folders. See here for more info.
The problem you're having sounds similar to this bug in which case it's Android that needs to improve and not us that needs to make changes at the server side.

Thanks for your swift reply. Annoyingly my first generation iPod Touch deals with the folders correctly.
