Structure of Code (PHP) Running as Apache Module

Just a thought.

Since using the new platform I still haven't worked out the best way to organise my code and wondered if anyone had any ideas.

In the new system everything non-executable has to be outside of the cgi-bin directory (which seems to throw some people) but where to put these files both on my PC and the CGI server hosting various projects puzzles me.

Currently I'm storing code in:
/cgi-bin/<project>/<code>.php

/cgi-bin/<project>/includes/<code>.php
And images and plain HTML in:

/<project>/<page>.html
/<project>/<images>/<image>.png

I've had to convert various projects and now use a 'resource path' constant to locate my images, etc. but I'm looking for a neat solution. I'm simply interested to see how others do it. Maybe using .htaccess redirects is better idea.

Anyway, I'll shut up now. Any thoughts would be welcome.
