I was always under the impression that the only way to change gateways was to reboot the router or for PN to force a swap from their end, which would in turn result in a router reboot. Yesterday I was doing some ping checks and noticed that I was on thn-ag1. I've just repeated the ping checks and have noticed that I'm now on thn-ag2; however my router stats don't show that a reboot has occurred. How is this done?

If you have performed or incurred a PPP disconnection rather than a full router reboot.

OO ta Strat! I thought dropping the PPP would cause the router to initiate a resync but obviously not.

Doing a PPP drop is the best way as the exchange doesn't see any loss of sync. You can do that as often as you like without fear of the DLM giving you a higher target noise margin.

How do you just drop the PPP then without doing a manual resync or reboot?

Depends on your router, some have a way to do it, others you have to just reboot.
The plusnet supplied 585v7 has a button to disconnect/connect the internet which just drops the PPP sessions and re-establishes it.
