Spam filter fine tuning

I recently had some mail stopped by the Spam filter which was legitimate mail. I tried using the "search" option on my inbox.spam but it kept crashing (maybe there are too many mails to check through?).
Is it possible to add a filter to say if certain characters appear in the senders address then it is not spam? It seems that you turn it on and accept what it does or you turn it off.
Regards
