I haven't changed anything other than replacing the router as mentioned but on checking the stats again it still seems to be fluctuating quite a bit on the noise levels

Connection Speed 2860 kbps 444 kbps
Line Attenuation 60.5 db 35.4 db
Noise Margin 3.0 db 17.7 db

Very interested in your situation! I too have a Linksys WAG200G with crazy SNR values.
I also bought a new modem router but that had the same problems (if not worse) so I am now back to the Linksys.
You might find running routerstats lite to be usefull.

It is a free windows utility which logs SNR, connection speed and can also log ping response times.
You get nice graphs and it can also write results to a text logfile for further analysis.
