I then reboot my router and it gets a far more realistic profile. Is there any way to manually "cap" thew profile?

Does it matter? It's an annoyance that my broadband is useless until I reboot it again because of the silly profile it's given

Yes it mattered, and as you may not understand how ADSL works, it could have been you rebooting because of line drops or some other fault affecting your noise margin. We don't know what modem/router you have, how old it is, or any line stats or BT speedtest results etc. Have you tried an alternative modem/router and filter at the Test Socket to try and eliminate those possibilities?
If you are wanting a profile to be fixed to some "nice" value, in fact any value, the short answer is no.
As you seem unwilling to give any information, you are probably best to raise a fault and wait for a member of the Plusnet team to look at your account rather than other forum members trying to assist you.

It's a draytek 2820, and the line is very stable (and always has been) except when the router is initially started, and it gets a totally unrealistic profile. I admit I don't know how these profiles are worked out, and what kind of history they have, but I know that my line is totally incapable of supporting 17715947, and the 1MB downloads from fast severs are taking over 3 hours to download and my router error rate is going bananas, yet when I restarted it gets 16854532 and the speed is brilliant and there is virtually no error packets.

I think what you are seeing is that very quickly - probably in the evening - the noise margin drops to about 1dB and the errors kill your connection.
A resync at that point will give a slightly lower speed with the 3dB noise margin.
The problem is probably related to the router (I have seen this before) hanging onto the connection and not resynching when the error rate is too high
If Plusnet manage to force the default noise margin to 6dB your speed will drop a lot more than 1,000kbps

If you have the latest firmware (a quick cursory search indicated it fixed a few bugs - didn't look at the detail) then I'd go for trying another modem/router and filter just to test if the same occurs.
It might be worth you posting the Modem/Router Line Stats from when it's ok and then again next time it isn't to see if the differences reveal anything.
Edit: add thread link

Speed test:
Going to reboot the router, and pretty sure it will get something that's a MUCH better sync rate, and something that instantly improves my speeds.
