If BT came to install FTTC and put one of their routers in place, would I be able to remove this and replace it with my own consolidated VDSL modem router so there's only one box?

Yes you could replace the Openreach modem with your own combined router modem. You would just need to add your BB username and password.
If you were planning to use the HomeHub 5 I wouldn't - I and many others experienced lots of disconnects. I reverted back to the supplied modem and used the HH5 as a router only.
