You are correct, the Hub One backup can not be restored on a Hub two

Screen shots will be your friend here

Edit: Setting static IP Address on the Hub Two can be quirky

I guessing the answer to this is "no", but is it possible to transfer settings from a Hub One to a Hub Two? I'm planning ahead for a move from FTTC to FTTP, and have a relatively complex setup of static IPs and port forwarding rules in my Hub One that I could do without having to recreate in a new router.

Which FTTP product are you thinking of getting ?

The Hub one will work on FTTP but it has an upstream bandwidth limitation of 30Mb. So it will work fine on the FF80 or FF145 products but will limit bandwidth on the FF300 or above

No, I'm looking at the 500 offering, so I'm committed to the Hub Two, but I'm wondering if the Hub One can be configured as a bridge/range extender (for items that won't really benefit from the upstream rate, e.g. my WiFi printer, which is a pain to re-configure).
